Here we are on a Saturday morning and my five year old boy is STARVING!!! I don’t want to just give him some quick breakfast treat.  It is the weekend and he deserves a nice hot meal cooked by his daddy.  If you have ever tried cooking for little ones, then you know that it can truly be a challenge. He seems to get bored of the same old things easily. So, I had to dip into my bag of tricks.  

Suddenly, it occurred to me that my boy loves pizza, so why not make a breakfast pizza. This could be a little challenging considering the wife and I are on a low carb diet.  However, I know of a recipe to make pizza dough using cauliflower and cream cheese which comes out to less than 1 gram of carbs per serving.

Now, what am I going to put on it?  Eggs of course, but it needs something else. I needed a high quality breakfast sausage to add a little zing.

So, I reached into the fridge to get my Wright Brand breakfast sausage I had bought at Sam’s Club and realized it was the perfect topping for this pizza.  Of course, every pizza needs a sauce, so I can utilize some of the sausage to make my own sausage gravy, thickened with cornstarch to keep carbs low.

First, I popped some sausage in the oven to cook, because you never want to top a pizza with raw meat products.  While that was cooking, I ground up the remaining sausage with an onion and made my gravy.  As that simmered I scrambled up some eggs and got them ready.  It is all coming together now!!!  The smell of a high quality sausage like Wright Brand is intoxicating and tantalizing in the morning when you are hungry.

Finally, the sausage is cooked, gravy is done, and it is time to build a pizza.  Using a pizza pan or a baking pan like I used, place the crust of your choice in the bottom and spread the gravy evenly across the pizza crust.  Next, top with eggs and cheese.

Finally, slice your sausage links and place on top of cheese.  Bake in oven at 400 degrees for about fifteen to twenty minutes.  I should mention, it makes the pizza cook a little better if you precook your crust for ten minutes before building.  Remove from the oven, slice and enjoy.  My boy gobbled it up in no time, and by using a cauliflower crust, I got him to eat his veggies!!!

  • twelve piece Wright Brand Sausage (cooked and sliced)
  • two cup sausage gravy
  • two cup shredded cheese
  • one piece premade pizza crust
  • 8 Large eggs (cooked anad scrambled)


Step 1
precook pizza dough
Step 2
spread gravy on crust, top with eggs, cheese and sliced sausage
Step 3
Bake in oven at 400 degrees for fifteen to twenty minutes

I know it sounds weird, but my boy is crazy about zombies and loves his weekly visit to granny’s house to watch his zombie show with her.  So, being Halloween, I was trying to think of how I could incorporate his love for the undead and the holiday into a fun and spooky snack for all of us to enjoy.

So, off to Walmart I go to look for some ideas.  It was not but a few steps into the store when I walked by the pizzas and saw Tombstone Pizzas with monsters on the packaging.  Perfect, dinner is served!  My boy picked the pumpkin because he loves his cheese pizza.  

Continuing on, I found the candy aisle and saw a whole lot of candy to choose from, but the Nestle Crunch, Butterfinger and Nerds fun size bags just seemed to be screaming out at me.  Somehow they told me in their own special candy way that I need to make some cupcakes and a cemetery out of them.  Looking around to complete the graveyard, I picked up a few odds and ends and headed to the register, paid, and off to the house we go.

Once home, I started by melting down a big bag of Nestle Tollhouse Semisweet Chocolate Chips with a spoon of vegetable oil.  Spread it out over some parchment in a cookie sheet and put it in the fridge to set up. I grabbed a box of cake mix, and whipped it up adding some crushed butterfingers, YUMMY!  As they cooked I started to unwrap the Crunch bars with the help of my trusty assistant.

Zombie Graveyard with Candy #TrickUrTreat #shop #cbias

Once the chocolate set, it was time to build a graveyard.  Using some green frosting, I marked off all the grave sites, placed a Crunch bar at the top of each for the headstones, and laid a Butterfinger across the grave for the coffins.  I found some sugar skulls to represent the dead rising from their graves and no graveyard would be complete without the army of gummy monsters standing guard at the front of the cemetery.

After the cupcakes cooled, the boy and I frosted them with some orange frosting and grabbed up some nerds to sprinkle over the top.  I love to incorporate several textures into everything, and the Nerds provided a well needed crunch to the cupcakes as well as looking nice on top.  My boy kept saying that his cupcakes were better than mine because he is an artist!  How do you argue with that?

Pizza is done!  Time to eat some dinner and then go straight for the sugar high and eventual crash.  Thank goodness it is close to bed time!

Butterfinger Cupcakes


  • 1 box yellow cake mix
  • 3 Large eggs
  • 1/2 cup butter, softened
  • 1 cup water
  • 2 cups Butterfingers (coarsely chopped)
  • 1 can Cream Cheese Frosting
  • Few drop Orange Food Coloring
  • 1 cup Nerds (various colors)


Step 1
Preheat oven to 350 degrees. Combine cake mix, butter, eggs and water. Mix together until all lumps are gone.
Step 2
Fold in coarsely chopped Butterfingers until well incorporated.
Step 3
Put liners in each spot of a mini cupcake pan, and spoon in batter about 2/3 of the way up each liner.
Step 4
Bake at 350 degrees for fifteen minutes. Take out and allow to cool before frosting.
Step 5
In a small bowl spoon out frosting and adding just one or two drops of orange food coloring at a time, mix together until desired color is achieved.
Step 6
Get your children and frost some cupcakes, and top with Nerds candy.

Today, being Sunday, I prepared lemon pepper chicken with grilled vegetables, using the Lemon Pepper and Garlic and Herb Sauté Express® Sauté Starters.

Lemon Pepper Chicken with Grilled Vegetables


  • 4 each thin slices chicken breast
  • 1/2lb asparagus
  • 3 Large portabella mushrooms (make sure to clean gills from underside of mushroom)
  • 3 Large peppers (assorted colors for contrast and flavor)
  • 2 cubes Land O’Lakes Sauté Express® Sauté Starter: Lemon Pepper
  • 6 cubes Land O’Lakes Sauté Express® Sauté Starter: Garlic and Herb
  • 2 cups Extra Virgin Olive Oil
  • 1/4 cup Soy Sauce
  • 1/4 cup Worcestershire Sauce
  • 1 pinch Salt and Pepper
  • 1 cup Dry White Wine (Only use wine that you would drink, no cooking wine)
  • 2 Small Roma Tomatoes (Seeded and Diced)


Step 1
Combine oil, soy sauce, worcestershire, salt and pepper together and pour over the vegetables. Set aside
Step 2
In a saute pan, place two cubes of lemon pepper Saute Express and melt. Once melted, add chicken and leave on a medium high heat.
Step 3
Allow chicken to brown on both sides and continue slowly cooking until chicken reaches an internal temperature of 165 degrees.
Step 4
Heat up grill pan and place vegetables on and cook for two to three minutes per side.
Step 5
In a separate pan, add wine and tomatoes on a medium high heat and reduce until only 1/4 of the liquid remains. Add all six cubes of garlic and herb Saute Express into the pan and slowly stir. Once butter begins to melt, remove from heat and continue stirring until butter is completely incorporated and sauce is rich and thick.
Step 6
Arrange vegetables on plate, top with chicken and drizzle sauce over the top. Serve and Enjoy!

Ad: Homegating For The Busy Family {Buffalo Chicken Calzone}

For the busy family, homegating for Thursday night football can be quick and easy, so I am going to show you, as part of a sponsored post for Collective Bias, how to create a delicious Buffalo Chicken Calzone for the perfect homegating party.

Here it is Thursday night, and I am ready to watch some football with my family!  However, like most families these days how do you find the time to make something fun, creative and delicious in such a crazy little amount of time?  

So, five o’clock on Thursday my wife picks me up from work (we only have one car) and it is off to get the boy from his afterschool program.  He comes skipping to the car all excited to tell us about his day in kindergarten.  However, at this point all I can think about is what am I going to make for us to eat during Thursday Night Football that is only two hours away!  Then, it hit me like a ton of bricks!  I had recently been to Sam’s Club and bought a 2.5 lb. bag of Tyson Buffalo Tenders.  But what to do with them so they are not just the usual awesomely delicious Chicken Tenders? I want to put a little more fun and adventure into the night!  BOOM!  Buffalo Chicken Calzones!

Off to the store we go, where I quickly pick up the ingredients I need to make some awesome homegating finger food.  Rushing home, the anticipation of making these is growing as I just love to create in the kitchen while using my family as guinea pigs.

I get home, pull out the Tyson Buffalo Tenders and just put about eight of them in the microwave for two minutes to thaw them out a little.  The great thing about them is that they are fully cooked making this a much easier and quicker process.

While those are going, I cut up my celery, tomatoes, peppers and brie cheese.  I crumble up the bleu cheese (I love bleu cheese especially the extra creaminess that seems to come particularly from danish bleu cheese).  I poured all of this in a bowl and cut up the tenders into bite sized pieces and mixed it in with all the ingredients to finish off the filling.

Grabbing a can of premade pizza dough, I cut it into squares, add the filling and fold them over to make the calzones.  Then, I quickly put them into my preheated oven and wait impatiently the twenty five minutes for them to cook.

Finally, they are done and I slide them off the pan and cut them in half to make them easier to eat and put some remaining celery sticks on the plate as a finishing touch with only moments to spare before kickoff.  I am trying to watch the game, but am becoming distracted by my wife and son gobbling down the calzones!  Love it!  What more could a husband and father ask for than, family, food and football on Thursday night?

Buffalo Chicken Calzone


  • 1/2 cup celery
  • 1/2 cup tomatoes
  • 1/2 cup red pepper
  • 5oz brie
  • 5oz bleu cheese
  • 8 Tyson Buffalo Chicken Tenders
  • premade pizza dough


Step 1
Thaw chicken tenders in microwave for two minutes.
Step 2
Chop celery, tomatoes, peppers, and brie into small pieces.
Step 3
Crumble bleu cheese.
Step 4
Chop chicken tenders into small pieces and add to the other ingredients.
Step 5
Roll out pizza dough, stuff with mixture, and close in the shape of a calzone.
Step 6
Cook on 400 degrees for 30 minutes.

Summertime is Here! Enjoy a Key Lime Cheesecake!

As we are right in the heart of summer, I know that desserts can be a trying thing to coordinate with the heat.  But, nothing says summer time dessert like a refreshing Key Lime Cheesecake!




4     8 oz. packages cream cheese

1 1/4 cups  sugar

1 tsp.  grated key lime zest

2 Tbsp.  Key Lime Juice

1  tsp.  vanilla

4      large eggs


2 cups    graham cracker crumbs

1 cup     sugar

pinch of salt

5 Tbsp.   Butter(melted)

In small bowl combine graham cracker crumbs, sugar, salt and butter and mix thoroughly. Press into bottom of a greased 10 in. spring form pan.  Place in preheated 325 degree oven for ten minutes.  Remove and let cool.

Mix ingredients for filling until nice and smooth.

Place on sheet pan and put in oven for 1 1/2 hours.  Pull out and let cool.

Topped with whipped cream and key lime wedges and serve!
